Chicken empanada. Easy recipe for kids


The empanada recipes they are versatile and quick to prepare. We can fit them both in the children's lunch and dinner, also at birthday parties or on a picnic with the children. The variety of fillings is huge. There are meat patties, tuna, ham and cheese, bacon with dates or raisins ... and so on, an infinity of ideas. For this reason, empanadas are a good way to introduce different flavors in the children's diet.

On this occasion, we have prepared a delicious chicken empanada, for your children to suck their fingers.

  • 300 ml of milk (or white wine)
  • 800 gr. Of flour
  • 300 ml olive oil
  • Salt and 1 egg to brush the dough
  • 300 gr. minced chicken
  • 1 red pepper / 1 onion
  • 1 small jar of crushed tomato
  • 50 gr. pitted green or black olives
  • 2 hard-boiled eggs / olive oil

1- First, prepare the dough. Mix the milk (or wine), oil and salt until the salt is completely dissolved. Add the flour and mix everything until the dough comes off your hands. Make a ball with the dough and let it rest for about an hour.

2- While the dough rests, we will make the filling. In a frying pan, with a little oil, sauté the finely chopped onion and red pepper.

3- Add the minced chicken meat, a little salt, and when it has some color, add the crushed tomato. Stir.

4- Chop the olives and hard-boiled eggs, and add them to the meat. Mix.

5- Remove the filling from the heat and let it cool down.

6- Meanwhile, divide the dough into two parts and stretch them separately until they are very thin.

7- Spread one of the doughs with the help of a rolling pin on a board and arrange it on a source (previously greased with oil and flour).

8- Pour the meat over the dough leaving a small space around the edges.

9- Spread the other part of the dough and place it on the meat. Close the pie by the edges and paint its surface with the beaten egg, with the help of a brush.

10- Make a small cut (2 cm) in the middle of the dough.

11- Take the empanada to the preheated oven, at 180 degrees, until golden brown.

12- And we already have our chicken patty ready to be eaten and tasted. Enjoy your meal!
